More thoughts on food: Okay, I just have to share this recipe with you guys. I got this from Sam Choy's cookbook, but I altered it to be low-fat.

Sam Choy makes this coconut milk and spinach sauce that he serves with macadamia-nut crusted fish. Yummy, right? And a billion calories.

We got sole filets from Costco, about 1.5 pounds of it. It's a bit much for just me and my husband, but it was cheap. Plus fish is good for you, right?

I marinated the fish in an olive oil, salt, ginger, green onion and cilantro marinade for about 30 minutes, but you don't have to do that. I only did it for a little extra flavor. Then I pan-fried the fish in a little of the oil from the marinade.

I bought light coconut milk, which is only 45 calories for every 2 ounces. I sautéed diced onions in butter, added 2 cups of chopped spinach (I could've used frozen spinach, too), then added 1.5 cups of skim milk and let it simmer about 15 minutes to reduce slightly (If I'd had evaporated skim milk, I would have used that instead). Then I added one can of light coconut milk and heated it through. Salted and peppered to taste.

I made rice--a combo of white rice and brown rice for fiber. I put a cup of rice on a plate, topped it with a few fish filets, and drizzled the coconut milk/spinach sauce over it.

Doesn't that sound yummy? And it was somewhat healthy, too.

Bible in 90 Days: Day 38. The Psalms are still wonderful. Today I read Robin's favorite, Psalm 91. Lord, I pray for Robin's family and pray they find favor.

Writing: I got a little writing done yesterday, despite the fact it was the Genesis postmark deadline. I didn't have as many last-minute emails as I thought I would.

Today, I've been fighting a few fires and hope to get some more stuff done tonight. It's nice because I can stay up late since I don't have PT tomorrow. I stayed up too late last night and almost couldn't roll out of bed this morning.

Diet: Yesterday I went for a walk, but for dinner I had too much fish, and then I lost control! I ate half a bag of veggie chips! I think I ended at close to 2200!! Waaaaaaaa...

But, as Heather reminded me, I just need to get back on my diet today.

Okay, good news--I did 30 minutes on the bike at PT and worked extra hard on my exercises in the gym. Bad news--I ate three pieces of French bread for dinner and ended the day at about 2100. Man I have no self-control! And after yesterday was so bad! I totally suck!

Diet? Hmmm...guess I shouldn't mention the box of chocolate covered cherries I got, huh? Of which, I ate almost half of. LOL I don't DO diets! LOL

I didn't get any writing done yesterday, but that's ok...I'm catching up on edits, then crits, then I'll get back to writing! LOL

I didn't get but about 5 last minute Genesis emails yesterday. I'm now waiting to get in the entries of all the ones who emailed me to let me know their entries were on the way! WOO HOO

I am having the diet week from hell.

Wel, okay, I mildly, mildly exaggerate.

I did eat too many truffles and too much not-very-good pizza. I should have taken hubby up on that dinner out offer. I'd at least gotten some spinach and broccoli at the steakhouse. :)

I also fell asleep with makeup on, so now, I have the acne break-out blues.....

I did have a yummy grilled tofu on mixed salad with ginger-carrot dressing for lunch. Boy, that was good. I may repeat that.

I WILL REFOCUS!!!!!!!!!!

Do come over and cook sometime! My poor family is eating hamburger helper and cereal almost exclusively these days, since that's all That Man knows how to cook. LOL

The battle of the bulge is not an easy one, and just beacuse you fell off the horse doesn't mean you suck, it just means that you have to assess why you fell, learn, and get back on. Before you know it, you won't be falling any more, and you'll be back in your skinny jeans ;-)

YOU don't suck, Camy. Don't make it personal on yourself. I am not even going to tell you what I have done for the last three days! I did great Monday and then totally blew it.

Just keep trying. It is a bumpy road sometimes. The exercise you are getting isn't only burning calories while you exercise, since you are building muscle, they burn more calories than fat, so you are also burning more calories at rest than you used to.

Toilet seat cover

Captain’s Log, Supplemental Update August 2008: I wrote up the pattern for this with "improvements"! Here's the link to my No Cold Bums toilet seat cover ! Okay, remember a few days ago I was complaining about the cold toilet seat in my bathroom? Well, I decided to knit a seat cover. Not a lid cover, but a seat cover. I went online and couldn’t find anything for the seat, just one pattern for the lid by Feminitz.com . However, I took her pattern for the inside edge of the lid cover and modified it to make a seat cover. Here it is! It’s really ugly stitch-wise because originally I made it too small and had to extend it a couple inches on each side. I figured I’d be the one staring at it, so who cared if the extension wasn’t perfectly invisible? I used acrylic yarn since, well, that’s what I had, and also because it’s easy to wash. I’ll probably have to wash this cover every week or so, but it’s easy to take off—I made ties which you can see near the back of the seat. And...

No Cold Bums toilet seat cover

Captain's Log, Stardate 08.22.2008 I actually wrote out my pattern! I was getting a lot of hits on my infamous toilet seat cover , and I wanted to make a new one with “improvements,” so I paid attention and wrote things down as I made the new one. This was originally based off the Potty Mouth toilet cover , but I altered it to fit over the seat instead of the lid. Yarn: any worsted weight yarn, about 120 yards (this is a really tight number, I used exactly 118 yards. My suggestion is to make sure you have about 130 yards.) I suggest using acrylic yarn because you’re going to be washing this often. Needle: I used US 8, but you can use whatever needle size is recommended by the yarn you’re using. Gauge: Not that important. Brainstorm - character occupation

Captain's Log, Stardate 03.23.2009 Hey guys, I could use some help. In my current manuscript, The Year of the Dog , which is a humorous contemporary romance, I have a minor character, Eddie. He’s my heroine’s ex-boyfriend, and they’re on good terms with each other. He’s a bit irresponsible, but not so much so that he’s a complete loser. He’s got a very easy going attitude, he forgets to pay his bills sometimes, he’s friendly and charming. He’s adventurous and fun to be around, but he’s a little forgetful sometimes, and he tends to spend a little outside his income. I need an occupation for him. What would a charming, easy going, slightly irresponsible guy do for a living? He’s not too irresponsible, because otherwise readers will wonder what in the world my heroine saw in him to date him in the first place.
