Beef tongue

Before you completely hurl, you have to understand that I grew up eating things like pig’s feet and chicken feet and oxtail and turkey tails.

I’ve never had beef tongue, and Captain Caffeine wanted to try it, so he went to the Chinese market and got one. Raw, it looks rather disgusting so I won’t post the picture.

He braised it in the pressure cooker with some herbs and then sliced it and braised it again in soy sauce and green garlic.





It actually turned out rather tasty, and I’ve eaten liver and kidney and didn’t get grossed out, but something about the beef tongue was a little off-putting. It tasted fine, it was just something in the texture or something that made me not care much for it.

Have you eaten beef tongue before? How did you prepare it?

Wow, you guys are very brave to cook it yourself! I've only had them prepared in restaurants. Very lean muscle type protein. And the flavor can be quite tasty... But yah, maybe it's the thought of it being the "tongue", I don't quite care for the texture of it.

I like reading manga, and when they head for Yakiniku and order offal (diagphram?) and tongue, it's like, 'Um, can I have filet mignon instead?" I'm totally a food wuss. Can't do organs and offal. Jewish delis serve tongue. My mom ate all the weird animal bits. I didn't inherit that disposition. Sadly. Offal is good for you.

The reason we wanted to try it ourselves is because the Captain had it at a Japanese restaurant and really liked it. But alas, ours was not as good and there was something about the texture I didn't like. Couldn't quite put my finger on it.

Offal is good for you? Still, after the tongue experience, I'm not sure I'd try it...

A friend of ours in CO made us a whole Mexican meal including the beef tongue. She put it with some peppers or something. The taste was not bad, but the texture... yikes. I couldn't get past the taste buds sitting there... it was like it was tasting me while I was tasting it. The rest of her meal was DELICIOUS (of course, I love Mexican food).

ROFL! Yes, I can relate! The little taste buds were kind of nasty looking. But I can see how tongue would be good as a Mexican dish with spices.

Window shopping

Captain’s Log, Stardate 03.14.2005 Knee update: I went to the doctor today for a checkup, and saw his assistant. I’ve been concerned because there’s still inflammation in my knee joint, and it’s been almost 4 months since the surgery. She said she’d talk to the doctor about it tomorrow and call me. Sometimes he suggests laying off the PT to see if that causes the inflammation to go away, but I don’t know if that will work because lately I’ve been pretty active outside of PT. At PT today, the therapist did ultrasound and some sort of electrical current on the joint. Hopefully that will make the inflammation start to go down. I’ll know by tomorrow, probably. Writing: Mt. Hermon conference starts this Friday! On Thursday night, I’ll be at the Santana Row Borders bookstore to help out (and hopefully learn a bit, too) at a booksigning for several of the ACFW authors who are attending Mt. Hermon . Captain’s Log, Supplemental My agent sent me an article from Publisher’s Weekly that discussed this incident: Chinese Take-Out Spawns Christian Controversy And here’s also a blog post that talks about it in more detail: The Fighting 44s This is Soong-Chan Rah’s blog: The PCS blog In sum: Apparently Zondervan (yes, my publisher), who has partnered with Youth Specialties, had put out a youth leaders skit that had stereotypical Asian dialogue, which offended many Christian Asian Americans. In response to the outcry, Zondervan/Youth Specialities put out a sincere apology and is not only freezing the remaining stock of the book, but also reprinting it and replacing the copies people have already bought. I am very proud of my publisher for how they have handled this situation. The skit writers have also issued a public apology . ICRS Tuesday

Captain's Log, Stardate 07.11.2007 I started the day with a great meeting with Al Hsu , an editor at InterVarsity Press. We discussed Asian Americans—fiction, non-fiction, the church, family. He’s been in publishing for many years and is very wise. We had a great discussion. I also met his wife Ellen, who’s totally nice and is also into card-making! I wandered the floor and happened to meet Robin Jones Gunn. She asked if I’d eaten yet, and since I hadn’t, said to join her for lunch. On the way to lunch, we met Mark Mynheir, and he gave me a copy of his book, got The Void . Isn’t that cool? Robin has so much wisdom. I loved having lunch with her. She gave me such good advice, both professionally and spiritually. I hope I’ll get a chance to have lunch or dinner with her at the ACFW conference in September. I met up with agent Steve Laube, and walked with him to his next meeting, but on the way we were hailed by Cec Murphy and agent Jeff Dunn. Jeff had been the first editor to request...
