I just finished writing Year of the Dog ! It had a massive plot hole that I had to fix which turned out to be more work than I expected. Here’s a snippet: “Hey, Auntie Nell.” He wrapped his arms around her, bussing her on the cheek and breathing in pikake flowers and shortbread cookies. And suddenly he was nine years old again, and her solid presence had made his chaotic world stable once more. “What are you doing here?” He usually took her to dinner on Wednesday nights, but today was Tuesday. The edges of her smile faltered a little before brightening right back up again. “What, I can’t visit my nephew?” She angled around him to enter his home. “Is this your new house? Looks lovely.” Which was a blatant lie, because the fixer-upper was barely livable, much less acceptable to a neat-freak like his aunt. I admit it, I’m a breakfast hater. I have never liked it because I have always woken up with a slightly queasy stomach. My family has a history of acidic stomachs, so my genes might have something to do with it. (I used to live off of TUMS and Zantac and just got tired of needing to take something every day for a queasiness that lasts only 60-90 minutes.)
I have tried forcing myself to eat a large breakfast, especially because most research shows that people who eat breakfast tend to be more successful at losing weight. But forcing myself to eat made me so sick I’d usually either skip or postpone lunch, both of which are bad.
When I read this article on quick and healthy breakfast ideas, I expected the usual stuff like a smoothie or egg white veggie omelet (which are listed). But I was also pleasantly surprised to see a few ideas I hadn’t read before, like making waffles, freezing them, and toasting them in the morning. For some reason I hadn’t thought of doing that, although I have tried freezing pancakes and microwaving them (yuck).
The casserole idea wasn’t entirely new, because I used to sometimes have dinner leftovers for breakfast when I was living at home, but for some reason it sparked the idea of making a breakfast casserole or a veggie frittata, which I hadn’t tried before. There are lots of unusual breakfast casseroles I think I’d like to try, and they don’t have to be just eggs and sausage ones.
